Let Chef Han take you on a tantalising journey of 20 courses, using the finest local Australian and Japanese produce. This exclusive, multi-course event allows for up to 6 people per seating and we only have a limited number of reservations every month.

$200pp (October + November menu) with an option to upgrade with matching wines and sake for $75pp.

Introducing Chef Han

Chef Han’s lifelong ambition was to become an architect back in his home country Korea. He always had an interest in design and an eye for detail. 10 years ago, he decided to move to Australia on a working holiday visa and had to leave his architecture studies behind.

His visa for work only offered a small number of skilled work choices so he applied as a Chef. In 2013 he graduated with a cookery certificate and started working as a Commis Chef moving his way up to Head Chef within a few years.

His passion for creativity in new dishes led him to discover further a path down the Omakase route. This is when he left Zushi after 10 years and worked with a larger restaurant group specialising in Omakase cuisine.

Chef Han honed his skills and eventually made his way back to the Zushi family to create this Omakase experience tailored just to Zushi.

He creates his own recipes and creates the menu from local and Japanese ingredients.

What is Omakase?

Omakase is a term from Japan that translates to “I trust you” or “I’ll leave it up to you.” At Zushi Surry Hills, our chef takes charge and curates a series of dishes for you to enjoy. Chef Han chooses the dishes based on his own personal taste and the freshest ingredients available, creating a unique and personalised dining experience.

What is the purpose of Omakase?

Omakase serves a dual purpose. Firstly, it allows our chef to express their culinary expertise and creativity by presenting their preferred dishes, and secondly, it aims to offer an unparalleled, one-of-a-kind dining experience that is customised for each guest. This style of dining is more than just a meal; it’s a chance for the chef to share their passion for food and a chance for the guests to enjoy a once-in-a-lifetime experience.

How is Omakase different from ordering à la carte?

At Zushi’s Omakase dining experience, the chef takes the reins, selecting each dish based on the freshest local and international ingredients available and their own culinary preferences. This means you do not choose each individual dish, and our chef crafts a complete culinary journey for you. When dining à la carte, you choose your own dishes.

Do you cater for dietary requirements?

Unfortunately there are no changes made on the menu. We do not cater for allergies or dietary requirements. If there are small changes that do not affect the menu such as no garnish, no wasabi or less rice for your nigiris, no worries we can cater for these but larger changes to recipes we apologise, we are unable to. 

How long does Zushi’s Omakase meal last?

Our Omakase dining experience typically lasts for 2 hours, creating an intimate and engaging atmosphere. During this time, you’ll have the opportunity to converse with our chef about the dishes they are preparing, as well as the ingredients used. This unique style of dining allows you to watch Chef Han create each dish right before your eyes, immersing you in the culinary journey and making the meal a truly memorable experience.

What is the etiquette for eating sushi during an Omakase meal?

If you’re ever unsure about how to eat a certain dish, don’t hesitate to ask Chef Han. We recommend using chopsticks or your hands to eat sushi, depending on your personal preference. Chef Han will add his own hand made soy sauce so it’s just the right amount..

How much does Omakase cost at Zushi Surry HIlls?

At Zushi Surry Hills, our Omakase dining experience is priced at $200pp for the October/November menu, with an optional upgrade to include a selection of perfectly matched wines and sake for an additional $75 per person. Our commitment to quality is reflected in our use of the freshest, locally sourced produce and carefully selected international ingredients. To ensure a truly exclusive experience, each seating is limited to a maximum of 6 guests, and we only offer a limited number of reservations each month.
